In the summer, people love eating mangoes, and experimenting with them is one of the practices people love to do most. One such recipe is of Aamras. It is one of the classic Indian desserts made by blending ripe, sweet mangoes with sugar, cardamom, and sometimes saffron or milk for a thicker, richer consistency. It is typically served chilled and best paired with hot and crispy puris.

How to prepare Aamras at home?

You can make the thick pulpy Indian dessert easily at home by blending peeled, chopped ripe mangoes (preferably Alphonso) with 2 tablespoons of sugar, and optionally, cardamom powder or saffron milk. 

Blend it until it becomes smooth, chill it for 1-3 hours, and serve with hot pooris for a traditional meal.

Instructions:

  • Wash, peel, and chop the mangoes, placing the pulp into a blender jar.

  • Add the sugar, cardamom powder, and milk/saffron (if using). Blend until a smooth, thick pulp is formed.

  • Transfer to a bowl and refrigerate for 1-2 hours. Serve chilled with hot puri.

The ingredients in Aam Ras that you can use to make a rich-flavoured dessert are:

Core Ingredients:

  • Ripe Mangoes: 3-4 large mangoes (Alphonso is preferred for its rich color and sweet, non-fibrous texture).

  • Sweetener: 1/4 cup sugar or powdered sugar (or to taste).

  • Flavoring: 1/2 tsp cardamom powder (elaichi) and/or a few saffron strands (kesar). 

Optional Variations & Add-ins:

  • 2-3 tbsp milk or yogurt for a smoother consistency or a tangy twist (Matho).

  • A pinch of dry ginger powder (soondh) for digestion or nutmeg powder.

  • Chopped nuts like pistachios or almonds.

  • A teaspoon of ghee or a pinch of salt

Which aam is best for Aamras?

Alphonso (Hapus) is widely considered the best mango for Aamras due to its rich, creamy texture, deep golden color, and intense sweetness.

However, you can also use different varieties, such as Dudhiya Malda, Kesar, Pairee, and Banganapalli.

How long does Aamras last?

An Indian style homemade aamras lasts for up to 2 to 3 days in the refrigerator when stored in an airtight container. It can be kept for up to 4 to 5 months in the deep freezer. 

However, without water, it can last in the freezer for up to a year, though it is best consumed within 6 months to maintain its quality and rich taste.
