The Junior Corner Suite became my perfect haven, boasting ample space to work and unwind, elegantly complemented by a freshly brewed espresso to kickstart my day. I was delighted to discover a bar of Co Wexford’s Bean and Goose chocolate by my bedside, alongside boxty on the breakfast menu and an ‘Irish Wine Geese’ section on the wine list. The hotel’s striking architecture and local storytelling create a refreshing ambiance. The chic rooftop bar and terrace, with breath-taking panoramic views, became my evening retreat, where I admired sunsets painting the skyline in warm hues. The rooftop bar transforms into a yoga studio by day, and thrilling wild swimming along Ireland’s rugged coastline awaits. Dining at Forbes Street by Gareth Mullins was exquisite, featuring Flaggy Shore oysters, marbled rib-eye, and creatively presented rhubarb dessert.
